Baked potato with chilli cheese

chilli cheese baked potatoIngredients:

  • 4 russet potatoes, washed, patted dry, and pricked with a fork
  • Chilli con carne (find our recipe here)
  • 2 tbsp olive oil
  • Grated cheese, to sprinkle

Method:

  1. Heat 1 tbsp of oil a skillet over a medium heat and make the chilli con carne.
  2. Make the potatoes while the chilli simmers.
  3. Preheat oven to 425°F/220°C.
  4. Rub 1 tbsp of oil on potatoes and then sprinkle with salt.
  5. Microwave on high heat for 6 minutes, but don’t cover.
  6. Turn over and then microwave for a further 4 minutes or until cooked through.
  7. Transfer potatoes to a baking sheet and bake for 20 minutes or until skins are crisp.
  8. Cut a slit on each potato to open and then spoon a mixture of the chilli on top of each potato.
  9. Sprinkle with grated cheese and serve.
