Chilli con carne
- 400g lean beef
- 1 onion
- 1 clove garlic
- 400g tinned tomatoes
- 400g tinned kidney beans (or mixed beans if preferred)
- 1tsp chilli powder (or more / less to taste)
- 1/2 tsp ground cumin
- 1 tbsp olive oil
- Black pepper
Method:
- Heat oil is a large saucepan.
- Meanwhile, finely chop the onions and crush the garlic.
- Gently fry the onion and garlic for 2-3 minutes.
- Add the mince and cook until slightly browned.
- Add the tinned tomatoes, chilli powder and seasoning and then bring to boil.
- Let it simmer for 30 minutes, while stirring occasionally.
- Add the kidney beans and simmer for a further 20 minutes.
- Again, stir occasionally.
- When ready, serve with boiled rice or use as a dip for Taco chips.
