Chilli con carne

chilli con carneIngredients:

  • 400g lean beef
  • 1 onion
  • 1 clove garlic
  • 400g tinned tomatoes
  • 400g tinned kidney beans (or mixed beans if preferred)
  • 1tsp chilli powder (or more / less to taste)
  • 1/2 tsp ground cumin
  • 1 tbsp olive oil
  • Black pepper

Method:

  1. Heat oil is a large saucepan.
  2. Meanwhile, finely chop the onions and crush the garlic.
  3. Gently fry the onion and garlic for 2-3 minutes.
  4. Add the mince and cook until slightly browned.
  5. Add the tinned tomatoes, chilli powder and seasoning and then bring to boil.
  6. Let it simmer for 30 minutes, while stirring occasionally.
  7. Add the kidney beans and simmer for a further 20 minutes.
  8. Again, stir occasionally.
  9. When ready, serve with boiled rice or use as a dip for Taco chips.
