White chocolate and ginger cheesecake

  • 200g of gingernut biscuits
  • 100g of butter, melted
  • 1 tsp of ground ginger
  • 450g of cream cheese
  • 200g of white chocolate
  • 100ml of cream
  • 1 tsp of vanilla extract
  • 1 tbsp of icing sugar

Method:

  1. Blend the biscuits in a food processor until you have breadcrumbs.
  2. Pour in the melted butter and ginger into the processor and mix everything together.
  3. Gently push the biscuit base into a cheesecake tin.
  4. Slowly melt the white chocolate in a bowl over a small pot of simmering water.
  5. Put the cream cheese in a large mixing bowl and add the white chocolate, cream, vanilla extract, and sugar.
  6. Beat all the ingredients together with an electric beater until you get a nice light mixture.
  7. Spoon the cream cheese mix into the tin and smooth the top.
  8. Sprinkle with thinly sliced chocolate and place in the fridge until you are ready to serve.
