What is for brunch? Baked eggs florentine

Try this delicious recipe for a family breakfast at the weekend.

Ingredients

500g fresh spinach
4 large free-range eggs
10g butter
150ml cream
1/4 tsp nutmeg
50g grated parmesan
Salt and pepper
Fresh sourdough bread to serve

Method

1. Heat the oven to 200°C. In a large pan, melt a knob of butter and add the spinach gradually. Cook until all the leaves are wilted, then transfer to a colander and press to remove excess liquid.

2. Return the spinach to the pan, add the cream, salt, pepper and nutmeg. Cook until the cream has thickened slightly. 

3. Divide the mixture between two small ovenproof dishes.

4. Make 2 wells in the spinach and crack an egg in each well. Season with salt and pepper and scatter the parmesan. Bake for 10 to 15 minutes and serve with sourdough bread.
