These Scotch eggs are a picnic essential and you need to try them

The good weather has been lasting for days, but it still feels like we need to enjoy every second of it!

Instead of eating inside, why not bringing dinner to the garden or the park and throw a fun picnic? 

If you want to make it simple, you can just pack some sandwiches and nibbles, but if you want to make it special, these Scotch eggs are the recipe you are looking for.

Scotch eggs

Ingredients

  • 10 large eggs, 2 beaten
  • 800g sausage meat
  • 1 bunch chives, finely chopped
  • 1 bunch parsley, finely chopped
  • 1 bunch thyme, finely chopped
  • 1/4 tsp nutmeg
  • 1 tbsp English mustard
  • Salt and pepper
  • plain flour, for dusting
  • 150g panko breadcrumbs
  • 2 litres vegetable oil
  • 3 tbsp vegetable oil

Method

  1. Put 8 eggs into a pan of boiling water and boil for 5 minutes. Transfer to a bowl of cold water. Once cooled, carefully peel them.
  2. Put the sausage meat into a mixing bowl and add the fresh herbs, nutmeg, mustard, salt and pepper. Mix well and divide into 8 balls.
  3. In one plate, place some flour, put the beaten eggs in a second one and breadcrumbs in a third one. 
  4. In the palm of your hand, flatten one of the sausage balls into an oval-shaped pattie. Roll a boiled egg in the flour, then place it in the middle of the pattie. Gently shape the meat evenly around the egg to cover it completely.
  5. Roll the sausage-wrapped egg in the flour, then dip into the beaten egg and finally in the breadcrumbs. 
  6. Heat the oil in a deep pan or deep fat fryer. 
  7. Carefully place the eggs in the oil and cook for about 4 minutes, until golden. Remove with a slotted spoon and drain on kitchen paper.
  8. Enjoy warm or cold.
