Smoked mackerel

smoked mackerel bitesIngredients:

  • 1 onion, chopped finely
  • Mushrooms, cubed
  • 1 clove of garlic, crushed
  • Bunch of fresh parsley
  • Knob of butter
  • 1 tbs oil
  • 1 mackerel
  • 1 glass of white wine
  • Cream/crème fraiche
  • Some cheese for topping
  • Bread, for dipping (optional)

Method:

  1. Sweat onion and garlic in butter with a little oil, add mushrooms.
  2. When cooked, break mackerel into large pieces and toss gently in onion and mushroom mix, add wine and let it reduce down until alcohol has burned away.
  3. Take it off the heat and add cream, thicken the sauce with arrow root or cornflour.
  4. Season with salt and freshly ground pepper.
  5. Stir through the parsley.
  6. Top with grated cheese (mix of mature cheddar and parmasan is nice) and pop it under the grill for 2 mins to melt the cheese.
