Smoked mackerel
- 1 onion, chopped finely
- Mushrooms, cubed
- 1 clove of garlic, crushed
- Bunch of fresh parsley
- Knob of butter
- 1 tbs oil
- 1 mackerel
- 1 glass of white wine
- Cream/crème fraiche
- Some cheese for topping
- Bread, for dipping (optional)
Method:
- Sweat onion and garlic in butter with a little oil, add mushrooms.
- When cooked, break mackerel into large pieces and toss gently in onion and mushroom mix, add wine and let it reduce down until alcohol has burned away.
- Take it off the heat and add cream, thicken the sauce with arrow root or cornflour.
- Season with salt and freshly ground pepper.
- Stir through the parsley.
- Top with grated cheese (mix of mature cheddar and parmasan is nice) and pop it under the grill for 2 mins to melt the cheese.
