Scrumptious Easter recipes to feed the whole family this bank holiday weekend

The Easter bank holiday weekend is so close we can almost taste it! Over the past few years we’ve been robbed of family gatherings and special get-togethers, so now whenever we celebrate with loved ones we like to make the most of it.

Spring is well and truly here and so Lidl Ireland is inviting shoppers to create a show-stopping Easter feast at home using its easy-to-follow seasonal Spring recipes.

Gather your family around the table and treat them to a traditional restaurant quality Spring feast using Lidl Ireland’s delicious Whole Roast Leg of Irish Lamb (€8.99 per kg). This tender cut of meat is one of the most wine-friendly dishes and suits most red wine.

Lidl Ireland’s Master of Wine, Richard Bampfield recommends pairing the lamb dish with the Rioja Crianza (€7.99) from Spain or the Saint Emilion Grand Cru (€14.99), both available all year round as part of Lidl Ireland’s everyday wine range across its 174 stores.

Roasted Leg of Lamb

Ingredients:

(Serves 6)

2.9kg Irish whole lamb leg

1 large onion, peeled and cut into wedges

2 tbsp olive oil

3 cloves garlic, grated

2 tbsp rosemary, roughly chopped

sea salt and freshly ground black pepper

Method:

Cooking time: depends on the weight of the joint

Remove the leg of lamb from the fridge 1 hour before cooking and remove from packaging.

Preheat the oven to 180C. In a bowl combine the oil, garlic, rosemary, salt and pepper.

Place the onion into a large roasting tray and place the leg of lamb on top. Drizzle the lamb with the garlic oil and use the back of a spoon to spread all over the joint. Pour in enough water to just over the base of the roasting tray.

Roast the lamb in the oven for 20 minutes/454g (medium) or 35 minutes/454g (well done) plus an extra 20 minutes.

Transfer the roasted lamb to a plate to rest for 10 minutes before carving.

Irish Espresso Martini

Ingredients:

70ml Deluxe Irish Cream Liqueur

70ml vodka

60ml espresso coffee

1 tsp vanilla extract

1 handful ice cubes

Lidl Chocolate Easter egg, to serve

Cook's notes:

If you’d like a chocolate or cinnamon version of this simply add 25g chocolate spread to the ingredients before shaking and top with a sprinkle of ground cinnamon for serving.

Equipment needed:

Cocktail shaker, cocktail glass.

Method:

Place all ingredients into a cocktail shaker along with ice, use fresh-from-the-freezer ice, as melting ice is too watery and will dilute the martini. You want the ice to smash up while chilling the liquid down as this is what creates the frothy top.

Once shaken, tap the side to break the vacuum seal and using a strainer or the strainer on the shaker. Create a medium sized hole in the top of your Lidl Ireland Chocolate Easter egg and strain the mixture into the chilled egg to serve.

Add a straw and garnish to taste.
