Recipe: Sweet potato & black bean shepherd’s pie

This is a show stopping crowd pleaser, guaranteed to satisfy a table of hangry guests who long for a bowl of hearty comfort food. The meat has been replaced with black beans, which have tonnes of flavour, enhanced with the subtle kick of spices and a Knorr Zero Salt Stock Cube.

Sweet potato & black bean shepherd’s pie

Ingredients:

  • 600g red sweet potato, cut into 2cm chunks       
  • 2 tsp cumin, powder
  • 1 tbsp oil             
  • 200g black turtle beans, canned, drained
  • 80g red onion, sliced       and rinsed
  • 250g mushrooms, sliced              
  • 400g lentils, canned, drained and rinsed
  • 2 x garlic cloves, mashed             
  • 70g tomato purée
  • 1 tsp smoked sweet paprika powder      
  • 400g orange tomatoes, chopped
  • 1 x Knorr Vegetable Zero Salt Stock Cube

Method:

  1. Preheat an oven on 175°C.
  2. Boil the sweet potatoes until tender (about 25–30 minutes), drain and mash until smooth.
  3. Season to taste and set aside.
  4. Drizzle the oil in a large baking pan or wok and fry the onions and mushrooms on a medium high heat until they colour
  5. Add the garlic, smoked paprika and cumin powder and heat through for about a minute.
  6. Add the lentils, black beans, tomato purée, chopped orange tomatoes and Knorr Vegetable Zero Salt Stock Cube, mixing everything together.
  7. Let it simmer for about 5 minutes.
  8. Spoon the bean mix into an ovenproof dish and top with the sweet potato mash.
  9. Place in the oven until it starts to crisp and turn golden brown on the top, about 30–35 minutes.

Chef’s Tips:

Really nice with some broccoli raab, spinach, peas or other nice green vegetables on the side.
