Pulled Pork on Carr's Mixed Grain Crispbread

This tasty snack is perfect if you’re having friends over this summer. Check out the simple recipe below.

Serves 8

Preparation time: 10 minutes
Cooking time: 40 minutes

Ingredients
8 Carr’s Mixed Grain Crispbreads
2 sliced pork chops
Fresh thyme
Sea salt
200mls of water
For the sauce
1 shallot diced
2 chopped cloves of garlic
1tbsp of brown sugar
2tsp of smoked paprika
4tbsp of tomato ketchup
1tbsp of Worcestershire sauce
2tbsp of sweet chilli sauce
For the slaw
1/4 a red cabbage sliced or grated
1 red onion slice
4tbsp of Greek yoghurt
Zest of half a lemon
Sea salt
1tbsp of white wine vinegar

Method
For the pork
Season with the salt and thyme, place it into a tray with the water and cover with tin foil so no air escapes.
Bake at 160oC for 40-50mins.
Once cooked remove from the oven and shred with two forks.
For the sauce
In a sauce pan, sweat in some oil, the garlic and shallot.
Add in the brown sugar and paprika and allow to caramelise.
Now add the following, ketchup, Worcestershire sauce, and sweet chilli sauce.
Allow to bubble and thicken on a medium heat and now spoon it over the shredded pork.
For the slaw
Combine all the ingredients in a really big bowl and now get ready to serve.
Spoon onto the Carr’s Mixed Grain Crackers the pulled pork in the sauce and then top with that incredible slaw.
