Got 30 minutes to cook dinner? This carbonara pasta bake is a life saver

When it comes to cooking dinner, we all have some staple recipes that we rely on: spaghetti Bolognese, beef stir-fry, chicken curry…

Easy to make, quick and cheap, this carbonara pasta bake ticks all the boxes and will please the whole family. 

Ingredients

  • 500g pasta – farfalle, fusilli, mini shells
  • 1 tbsp olive oil
  • 150g lardons or pancetta
  • 4 eggs yolks
  • 200ml cream
  • 1 tsp freshly ground pepper
  • 100g mozzarella grated 
  • 100g parmesan. grated
  • Parsley, to serve

Method

1. Heat oven to 180°C/375°F/Gas 4. Lightly grease an ovenproof dish.

2. Cook pasta in a large saucepan of boiling, salted water, following packet directions. Drain and return to the pan.

3. Heat olive oil in a frying pan over medium to high heat. Add the lardons and cook until crisp. Add to the pasta. 

4. In a small mixing bowl, whip the egg yolks with the parmesan and pepper, then add to the pasta. Finally, add the cream. Toss to combine and transfer onto prepared dish. Top with remaining parmesan and mozzarella.

5. Bake for 20 minutes. Serve immediately.
