Curried sausages
- 5 thick beef sausages
- 1 onion, sliced
- 1 tsp sweet paprika
- 1 tsp turmeric
- 1 tsp curry powder
- Freshly cracked pepper
- 2 bell peppers, different colors
- 2 courgettes, sliced
- 1 glass water
- 1 tsp corn flour
- 1 tbsp brown sugar
Method:
- In a frying pan, cook the sausages until just done, slice and set aside.
- Discard residual oil from the pan.
- In the same pan, add the onion and bell peppers and cook until the onion is transparent.
- Add the paprika, turmeric, pepper, brown sugar and curry powder. Fry this for 2 minutes.
- Add the sliced sausages to the pan and stir.
- Mix the corn flour into the glass of water and add to the pan.
- Stir continuously until the sauce thickens.
- Add the zucchini and cook for 3 minutes.
- Serve with rice or mashed potatoes.
