Cinnamon and apple muffins

apple and cinnamonIngredients:

  • 250g self-rising flour
  • 200g sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 egg
  • 1 tsp vanilla
  • 180g milk
  • 75g oil
  • 2 small apples, peeled and chopped

Method:

  1. Preheat oven to 180°C.
  2. Line a 12 cup muffin tray and set aside.
  3. Combine the flour, sugar, cinnamon and salt in a bowl and mix.
  4. In a jug, combine the egg, milk, vanilla, oil and chopped apples.
  5. Fold the wet ingredients into the dry ingredients using a spatula until all the ingredients are just wet.
  6. Evenly divide the mixture into the muffin cups and smooth the top.
  7. Bake for 22-25 minutes.
  8. Leave to cool in the tray for 5 minutes and then transfer to a wire rack to further cool.
