Chicken Salad with Hellmann’s Light Mayonnaise

chicken-and-saladThis chicken salad sandwich is a healthy way to fill you up at lunch.

Ingredients:

  • 2 slices of wholemeal bread
  • 2 tbsp Hellmann’s Light Mayonnaise
  • Butter to spread
  • Iceberg lettuce, washed
  • 1 tsp mustard
  • ½ clove garlic, crushed
  • 100g chicken, cooked and diced
  • 1 larfe tomato, sliced
  • Salt and pepper to taste

Method:

  1. In a large bowl, combine the  Hellmann’s Light Mayonnaise, mustard, chicken and garlic. Add salt and pepper to taste.
  2. Lightly spread one side of each bread slice with butter.
  3. Layer the lettuce and tomato onto one slice of bread.
  4. Add a good dollop of the Hellmann’s Light Mayonnaise chicken mix onto the lettuce and tomato.
  5. Sandwich together with the other bread slice.
