Bye bye butter! These healthy, fudgy AVOCADO brownies are actually good for you
Avocados are known as ‘nature’s butter’ for a very good reason. They’re rich, spreadable AND, if you didn’t know already, a brilliant alternative to butter or marge for making fudgy, moist brownies.
And if you’ve never tasted healthy, delicious avocado-based brownies before, prepare to have your mind blown.
These ones are made with unprocessed sugar and are packed with good fats. Yep, healthy brownies exist, and as far as we’re concerned, taste just as good as the naughty kind.
What a time to be alive!

Ingredients (makes eight medium-sized brownies)
1 large mashed avocado
2 eggs
120g coconut flour
1 half tbsp sea salt
1 tsp vanilla extract
100ml maple syrup
170g unsweetened cocoa powder
50ml melted coconut oil

Method:
1. Preheat oven to 180 degrees
2. Line 8×8 inch baking tray with foil and lightly coat with a brush of the melted coconut oil
3. Blend avocado, maple syrup and vanilla.
4. Add the eggs and whisk
5. Add the flour, remaining coconut oil, salt and cocoa powder and blend
6. Pour into pan and spread evenly
7. Bake for approx. half an hour or until fork comes out clean
8. Enjoy the healthy, tasty goodness – yes really!
