A kid's favourite! Try this tasty stuffed chicken

Called a "cordon bleu", these chicken breasts stuffed with ham and cheese are a French classic that you need in your repertoire.  

Ingredients

  • 4 chicken breasts
  • 4 slices ham
  • 4 slices mild cheddar cheese
  • 100g flour
  • 1 egg
  • 60ml milk
  • 100g breadcrumbs 
  • 3 tbsp olive oil
  • ½ tsp nutmeg

Directions

1. Cut each chicken breast in half horizontally, about 90% down to keep the two sides together. Place each breast flat between 2 sheets of plastic wrap. Using a pan, pound out to thin the chicken. Place the chicken breasts on a baking sheet and season with salt and pepper. Arrange one slice of cheese and one slice of ham on each half of the chicken breast. Fold the other half of the chicken on top, making sure the ham and cheese are well tucked into the chicken. 

2. Beat the eggs with the milk and add the nutmeg, salt and pepper. Dip a chicken breast in the flour, then in the egg mixture and finally in the breadcrumbs. Repeat with all the chicken breasts.

3. Preheat the oven to 180°C. Heat some olive oil in a large frying pan over medium to high heat. Place the chicken breasts on the pan and cook 2 minutes on each side. Transfer to a tray lined with baking parchment and place in the oven for 20 minutes, flipping halfway. Serve immediately with a side of salad.
