Coconut oatmeal cookies

coconut oatmealIngredients:

  • 200g all-purpose flour
  • 1 tsp baking soda
  • ½  tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • 115g butter, softened
  • ½ tsp vanilla extract
  • 1 tbsp milk
  • 170g brown sugar (light or dark), firmly packed
  • 80g white sugar
  • 2 eggs, large, extra or jumbo
  • 80g quick cooking oats
  • 70g shredded coconut (sweetened or unsweetened)

Method:

  1. Preheat oven to 350°F/175°C.
  2. Sift together flour, soda, baking powder, salt and cinnamon in a medium bowl.
  3. Cream butter and sugars in a large bowl until well combined.
  4. Beat in vanilla, milk and eggs until light, about 2 minutes.
  5. Stir in flour mixture and then add oats and coconut.
  6. Drop teaspoonfuls onto a parchment lined baking sheet.
  7. Bake for 11 minutes or until cookies are lightly browned.
  8. Let cool for a few minutes on baking sheet, then move to a wire rack until completely cooled.
