Knickerbocker glory
- 300g strawberries, hulled and quartered
- 300g raspberries
- 2 tbsp caster sugar
- 2 tbsp lemon juice
- 1×1 ltr tub of good quality vanilla ice cream
- Whipped cream
- Glacé cherries to decorate (optional)
Method:
- Mix the berries, sugar and lemon juice in a bowl and leave to macerate for at least an hour.
- Add a tablespoon of fruit and some of their juice to the bottom of four sundae glasses. Follow this with a scoop of ice cream.
- Repeat these steps until you reach the top of glass.
- Spoon or pipe some whipped cream onto the top of each sundae.
- Pop a cherry on top of the whipped cream, if you like, and drizzle with a little more of the fruit juice.
