Knickerbocker glory

Knickerbocker gloryIngredients:

  • 300g strawberries, hulled and quartered
  • 300g raspberries
  • 2 tbsp caster sugar
  • 2 tbsp lemon juice
  • 1×1 ltr tub of good quality vanilla ice cream
  • Whipped cream
  • Glacé cherries to decorate (optional)

Method:

  1. Mix the berries, sugar and lemon juice in a bowl and leave to macerate for at least an hour.
  2. Add a tablespoon of fruit and some of their juice to the bottom of four sundae glasses. Follow this with a scoop of ice cream.
  3. Repeat these steps until you reach the top of glass.
  4. Spoon or pipe some whipped cream onto the top of each sundae.
  5. Pop a cherry on top of the whipped cream, if you like, and drizzle with a little more of the fruit juice.
