Bread sauce
- 600ml milk
- 1 large onion studded with 6 cloves
- 4 peppercorns
- 100g fresh white breadcrumbs
- 1tbsp butter
- Bay leaf
- 2 tbsp cream optional
- Freshly grated nutmeg
Method:
- Put milk in saucepan with studded onion, peppercorn, and bay leaf.
- Bring slowly to boiling point then remove heat, cover the pan and set aside for 30 minutes.
- Strain milk into a heatproof bowl, pushing onion against side of strainer to extract as much liquid as possible.
- Stir in breadcrumbs and butter and then season with salt pepper and nutmeg to taste.
- Set bowl over simmering water and cook for 20 minutes, stirring occasionally until thick and creamy.
- If using cream, stir in just before serving.
