Bread sauce

bread sauceIngredients:

  • 600ml milk
  • 1 large onion studded with 6 cloves
  • 4 peppercorns
  • 100g fresh white breadcrumbs
  • 1tbsp butter
  • Bay leaf
  • 2 tbsp cream optional
  • Freshly grated nutmeg

Method:

  1. Put milk in saucepan with studded onion, peppercorn,  and bay leaf.
  2. Bring slowly to boiling point then remove heat, cover the pan and set aside for 30 minutes.
  3. Strain milk into a heatproof bowl, pushing onion against side of strainer to extract as much liquid as possible.
  4. Stir in breadcrumbs and butter and then season with salt pepper and nutmeg to taste.
  5. Set bowl over simmering water and cook for 20 minutes, stirring occasionally until thick and creamy.
  6. If using cream, stir in just before serving.
