Wholegrain apple and almond muffins
- 200g wholegrain flour
- 50g almond powder
- 1 tsp baking powder
- 1 tsp cinnamon
- 100g golden caster sugar
- 2 eggs
- 125ml semi-skimmed milk
- 4 tbsp sunflower oil
- 2 apples, grated
Method:
- Heat oven to 180°C/160°C fan/gas 4.
- Mix the whole grain flour, baking powder, cinnamon, almond powder and golden caster sugar in a bowl.
- In a separate bowl, mix the eggs, semi-skimmed milk and sunflower oil.
- Pour the wet ingredients into the dry and mix well.
- Stir in the grated apples and combine.
- Evenly divide the mix into muffin cases and bake for 25 mins.
- Cool on a wire rack, then serve with butter or jam.
