I'm boring and mostly stick to vegetable soup. Yesterday I made a winter vegetable soup.

1 white onion & 1 red onion
3 carrots
1 parsnip
About a quarter of a turnip, maybe slightly less
1 sweet potato
About 4-5 sprigs of broccolli (optional but good for thickening)
Stock cube (I use Kallo)
2 sprigs of thyme (because that's the only herb I have growing!)
Freshly ground black pepper and sea salt

Chop onions finely and sweat in mild olive oil or vegetable oil, a tiny amount is all it needs. You can also use butter as the ring should only be on 3 or 4 it won't burn
Make the stock with the cube and boiling water, add this when the onions are sweated along with the carrots, turnip, parsnip and sweet potato (all diced) Add broccolli if using, thyme and seasoning.
Bring to the boil and simmer until veg is soft, about 30-45 minutes. Allow too cool a little and liquidise.
I usually make it fairly thick so that I can water it down to the desired consistency, rather than trying to thicken a soup that's too thin

pepper soup

100g red lentil
400ml veg stock
can coconut milk
cumin
coriander
chilli
fry onion with spices
add pepper stock lentils milk
simmer till peppers soft
blitz when cooled a bit
reheat salt to taste
it's so yummy made a pot yesterday!

Sounds yummy but we are not coconut lovers here... do you think this soup would be ok without it or is there an alternative to use?

the coconut milk adds sweetness and creaminess
tbh it does not taste coconutty
maybe use cream instead ?
I have another lentil soup without coconut will dig it out

red lentil soup
2tsp cumin seeds(i just used ground)
pinch chilli flakes
1 tbsp olive oil
1 red onion chopped
140g red lentil
850ml veg stock(i used chicken as it was all i had)
400g tin chopped tomatoes
1 can chickpeas
fry spices and onions,add lentils and stock,simmer for 15mins
whizz it up
add chickpeas as whole and reheat

red pepper &tomato soup
400g tiin chopped tomatoes
1 tbsp olive oil

2 large red peppers chopped
salt/pepper
900ml stock
pinch sugar

fry onions,add tomatoes/peppers
season,add stock,boil
reduce,simmer-10mins
whizz,add sugar.serve.

I made a pot of Chicken and Sweetcorn soup last night from Rachel Allen's Homecooking cookbook.
Very quick and really tasty.

25g butter
200g boneless skinless chicken breast cut into cubes (leftover chicken can also be used)
1 large onion peeeled andchopped finely
3/4 cloves garlic
600 ml chicken stock
125 ml milk
125 ml cream (I didn't use cream, just doubled up on milk)
340 g tin sweetcorn, drained
Salt and black pepper
1 spring onion, trimmed and finely chopped
Squeese of lemon juice
Roughly chopped parsley

Melt butter and gently fryonion, garlic and chicken. If you're using leftover chicken, just fry off onion and garlic andthen add chicken.

Combine stock, milk, cream, sweetcorn, salt and pepper and blitz in a blender to a rough purée. Pour over the chicken, garlic and onion and bring slowly to the boil. Simmer for 4/5 mins

Stir in parsley and spring onion and add a little lemon juice. Serve immediately

Love this thread ! Have soup nearly every day for lunch in the winter.

This is my absolute favorite, it's an Avoca recipe.

Courgette and Almond Soup

50g butter
1 onion peeled and chopped
1 potato peeled and chopped
3 courgettes finely chopped
600ml veg stock
25 gr grounds almonds
125 ml cream
125 ml milk

Melt butter, add onion and potato for 5 mins
Add Stock and courgettes and simmer for 15 mins
Add salt and ground pepper. Add cream, milk and almonds and blend.

i just logged on this morning and Kimbaby your receipe was the first thing I saw, just fancied something nice. I have just made the roasted butternut squash soup and it is absolutely delicious. I think I would use less rosemary the next time as the taste is quite strong so not sure if the kids will like it but hopefully they will. Perfect for this kind of weather.
