there are so many flavours going on I don't think the Rum would be noticed if missing! It's only 60mls of it anyway.

I made this Sunday - would definitely make it again. I followed the recipe exactly and like Kimbaby, would probably leave out the chilli next time - and even the cayenne. We also served it with yogurt because it was so spicy.

My 15 year old cuisinart finally gave up the ghost while I was making this marinade - lid lifted off as I whizzed it - marinade hit everywhere! Made a nice smell in the kitchen though.

This was yet another Food Club hit!

I marinated the chicken breasts from early this morning, they were really moist when cooked. I deseeded my chillies and only used 1 tsp of cayenne pepper but it was still quite spicy. I definitely needed a dollop of natural yoghurt for the kids portion. I didn't have the rum, I thought about using bicardi but decided to go with the coke.

As I was preping the rice I discovered that I didn't have any kidney beans or any frozen peas so with had the rice without either.
I loved it cooked in the coconut milk, gave it a completely different texture and taste.

Everyone, even fussy DD2, cleared their plates so this will definitely be a regular dish here, thanks Ebyss!

:crazy: Bet that was fun cleaning up!
Mine did something similar but thankfully only got the counter top! I'll definitely be more careful next time.

That's a mad coincidence - my poor ould ken wood cracked right down the funnel and also a bit on the main bowl so going to have to get a new one!!

Had left over chicken tonight, dh ate earlier and ate all the rice so I threw together some veg fried rice - no chilli!! And it was lovely with the chicken which was even tastier today and the spices had mellowed out a bit!

This was absolutely gorgeous. Had the chicken marinating all day so it was so tender. But my god was it hot, I never put the chilli seeds in a dish but on saying that I was able to eat and it didn't burn the mouth off me! I thought the coke gave it a great flavour, could taste the sweetness of the coke. DH would have eaten double the amount I gave him! It was such an usual flavour but completely addictive.

And the rice, now that was devine. I used kidney beans but I reckon black beans would be fab in it. Was a bit weary of the rice as it smelt a bit like rice pudding but it was amazing.

Didn't do it for the boys as I knew they wouldn't eat it (DS2 is on a 'I only want pasta' phase) but I think I'll try DS1 out on the rice and see what he thinks. Have loads of rice left to freeze.

Huge thumbs up from here.

Delighted everyone enjoyed it - one question though:

Do you think I should put a warning in the first post that it can be very hot, and to cut down/leave out the chillis and cayenne pepper if you're not into heat?

Probably no harm, I knew a whole chilli would be spicy but if you are cooking this as a family dish I think it would be too hot for smallies. Though when doing it again I will still add a whole chilli :biggrin:

How long did any of you cook the chicken for? The hour def seems very long, as Ebyss said.

Have it prepped and going to cook in a while.

Probably about 40 mins Karis, I turned the oven low after about 20 mins to give me time to do the rice.

Made this last night and it was yummy. I like spicy food as does DH and we enjoyed it, next time though I will leave out the chilli in the marinade so that I could freeze some for DS. Rice was delicious, used borlotti beans. Thanks Ebyss!!!

Had this for dinner this evening. It was absolutely delicious. Really really tasty! I didn't put the fresh chilli in as I wanted the children to try it. The flavours were fantastic and the chicken was very tender and juicy having been in the marinade all day. I actually have the Nigella Kitchen book this is in but had never made it before for some reason. I'll definitely be making it again-thanks Ebyss!

My Kids are driving me to distraction only two of them would try this the other two wouldnt even look at it, but its not just this they were as bad with the shepherds pie the night before so think in general its a dinner strike they are on.

Myself DH and the teenager loved it, although I think I made a major boo boo in that I left the liquid on the chicken to cook and I probably should have cooked it drier and the sugars would have caramelised slightly? The rice was lovely although a bit sweet but a good balance to the chicken, all in all it was good and I will make the tweaks myself for the next time

We had this tonight. DD ate it but wasn't deleriously happy doing so. DS was a nightmare, didn't want it at all.

We cooked it in the marinade, thought we were supposed to! I found the topping bits way to strong to eat (I'm sure you are not supposed to). Didn't put much of the sauce on it either when I served it up. Like Daffy Duck I would tweak it, I could really taste the cloves & cinnamon. I had only put in one teaspoon of cayenna and 2 deseeded chillis as I hadn't seen the warning. I didn't find it hot spicey at all. I added kidney beans to the rice, thought it was lovely.

Would probably make it again but as Daffy Duck said would tweak.

It has been so long since I made a food club dish but I have the chicken marinading since lunchtime and about to make it now for dh & myself - very excited! I didn't have rum so judt left it out..

Will report back later! I have high hopes for this one :D
