Hope you had a great birthday pagangoddess, and enjoyed the dinner! I am getting all set to make your lebanese mezze - can't wait, will do it later this week.

I am making jambalaya again tonight - it's simmering away in the background and smells so so so good!

DH is recovering after a dreadful flu / virus, he's been sick for 10days. I was grocery shopping this afternoon & asked him if he had any requests as he's been really off his food. He asked for jambalaya :D I was more than happy to oblige!!

Just realised that this is lovely cold too! Made it last night for tonights dinner and once again we all devoured it, this time instead of the chorizo I used the Simply Better spring onion and black pepper sausages from Dunnes, it was lovely and I didn't have to pick out the sausage pieces from the boys plates!
There was lots leftover too so was sorting it out, dh is taking some for lunch tomorrow, it'll be cold so we had to taste it to see would it be ok....yummy! we ended up finishing it off between us :lol: Am thinking it might be nice to take on a picnic.

This is definitely my favourite from the food club.. and I'm not even a member :blush:

Just joined the Food Club - made this dish first. I LOVED it. DH and DS did not - it was too spicy for them. I'm going to try a curry version, like a Biryani type dish. Loved this recipe, so easy and really really tasty.

Ebyss, welcome to the club! I started about 2 months behind and soon caught up. I love cooking the dishes anbd then twesking them to suit our taste. Many of them I would not have tried in a million years but for the foodclub- jambalya is one- and now it is a firm favourite.

Not a member but love reading the recipes and just tried the Jambalaya and its gorgeous. My two were looking for more! Will have to make a double amount next time. thankyou for sharing.

I just googled cajun spice recipe and came up with us ...

Ingredients:

* 1/3 cup kosher salt
* 1/4 cup chili powder
* 1/4 cup Hungarian paprika
* 1 Tablespoon onion powder
* 1 Tablespoon coarsely ground black pepper
* 1 Tablespoon dried basil
* 1 Tablespoon dried oregano
* 1 Tablespoon ground coriander
* 1/2 teaspoon cayenne pepper
* 2 teaspoons dried thyme
* 1/4 teaspoon cumin
* 1/4 teaspoon white pepper


Ingredients

* 3/4 cup salt
* 1/4 cup ground cayenne pepper
* 2 tablespoons ground white pepper
* 2 tablespoons ground black pepper
* 2 tablespoons paprika
* 2 tablespoons onion powder
* 2 tablespoons garlic powder

Ingredients

The first time I made this I wasn't that impressed with it but because everyone said it was fab I promised I'd try it again.

We had it for dinner tonight, I added prawns and a pinch of paprika and it was absolutely gorgeous! I had to stop myself for eating seconds and thirds! Delicious :thumbsup:
I obviously made an error somewhere along the line on my first attempt.

I made this tonight for the 1st time and absolutely loved it. Added the prawns and used 2 peppers, green beans & sweetcorn for the veg. Really easy to make. This is definitely 1 to make for a girls night in.

Would you get away with not using chorizo in this dish do you think, or would it alter the taste too much? Am dying to try it but dh absolutely hates chorizo!

I make this regularly and vary it according to whats in the fridge :) , sometimes chorizo, or else plain sausage, herby sausage or last time I used aldi's bacon bits instead of any sausage and it was yummy :)

Im not in the club but made this last night. DD is a bit fussy so just picked the chicken out and ate away but myself and DH were v.impressed. I just had the chorizo slices in the fridge so tore them up and threw them in, i had some jumbo prawns so used them and chicken, i loved it and going to use the prawns again next time i make it.
The recipie makes so much for veg i didnt use celery but had carrots, red pepper, yellow pepper and lots of garden peas from freezer.
The leftovers are in the fridge for tonight but just wondering does it freeze well i dont know if you can freeze rice dishes.

Ells, I found it doesn't freeze great but it tastes better the 2nd day.

I did this last night and put in way too much cajun powder - nearly blew the heads of me and DH! Thankfully I had made the boys separately as they don't like 'spicey'!

Haze, I do the same as you - add whatever is in the fridge!

Thanks Clauds, we ate the leftovers for dinner yesterday it was lovely alright but i think next time i'll use half the ingredients as i dont want to eat it two nights in a row each time i make it. I'm going to make it regulary now we love it.
