Right so I have Chicken Thighs for tomorrows dinner & I'm feeling very uninspired. Anyone got any suggestions & recipes, pretty please. :biggrin:

If you feel like de boning them a chilli made with thigh meat is gorgeous especially if made night before. I suppose you could leave them unboned too - although I haven't done that. Curries great with thigh meat too and my Pakistani friend always leaves her thighs whole in it- my kids get a bit whiny when I try to do same so I gen debone them

if the skin is on you can marinade them in salt and peper, some spices - paprika, chilli (whatever you have) and then splash some olive oil and roast them for 40 minutes. Love with salad and potatoes.

if skin is off slow cook them in a curry - thighs are the best meat for a curry.

Look up nigella's spanish chicken, just need chorizo, potatoes, onion, very tasty, my kids love it.

Chicken and cider pie

8 chicken thighs
300ml dry cider
300ml chicken stock
1 large leek
50g butter
5og plain flour
2 tablespoons parsley
1 pack of puff pastry (or make around 500g yourself :biggrin: )
egg to brush over.

put the thighs into a pot and cover with cider and stock, simmer for about 45 mins
take out the chicken and throw in the chopped leek and simmer for 5 mins, pour into a sieve and keep stock in a jug, add water til there is 600ml liquid.
melt butter in a pan, stir in flour and add stock little by little mixing well and bring to boil whilst stirring.
once nice and thick add the herbs and seasoning.
dice chicken and put into a ceramic dish with leeks, pour over the thickened stock.
cover with pastry and brush over with the egg.

put in oven at 200 c gas 4 for 30 mins.

mix 1tbsp mustard, and 1 tsp each of worchestershire sauce, ground ginger, sugar, salt, pepper and lemon juice.
marinate the chicken overnight/or from morning, turning it from time to time.

before cooking under grill for 20 mins brush over the chicken with remainder sauce and cook until browned or cooked through

for a bbq glace

60ml bbq sauce, 1tbsp brown sugar, 1/2tsp tabasco sauce, 1tsp salt, 1/2tsp pepper 1tbsp cider vinegar

throw it all into a sandwich/zip bag and shake well, score the chicken and put into the same bag and leave in fridge for a few hours.

preheat oven 200 c gas 4 and lightly oil foil. put the chicken on tray and use 150ml of bbq sauce and brush over the chicken.
cook for 20 mins, turn chicken and brush the under side with remainder bbq sauce return to over for another 20 mins.
turn chicken again afor the remainder 20 mins, rebrushing is optional

I would bone and stuff them. Wrap them in a rasher, pan fry to brown and finish off in oven.

This went down a treat- kids loved it. I only used half portions of the veg and it was enough for us.
